Nutritious Banana Protein Muffins

This banana protein muffin recipe from Nan's Test Kitchen is so good, it's hard to believe it's healthy!

Ingredients

Muffin Ingredients:

  • 2 Eggs
  • 4 Bananas
  • 1/2 Cup Applesauce
  • 1/4 Cup Maple Syrup
  • 1 Tsp Baking Soda
  • 1/4 Tsp Salt
  • 5 TBSP Flaxseed
  • 2 Cups Almond Flour
  • 5 Scoops Collagen (can be omitted)

Topping Ingredients:

  • 3/4 Cup Oats
  • 2 TBSP Maple Syrup
  • 1 1/2 TBSP Coconut Oil
  • 2 TSP Cinnamon

Steps

  1. Preheat oven to 350 degrees F. Mix eggs and bananas together.
  2. Mix in applesauce and maple syrup.
  3. Mix in baking soda, salt, and flaxseed.
  4. Mix in almond flour and collagen powder.
  5. Separate into a 12 cupcake pan. Set aside.
  6. Make topping: Combine all ingredients and sprinkle on top of muffins.
  7. Bake for 25 minutes, or until the middle comes out clean on a toothpick.*The inside will be moist due to the applesauce.
