Simple Savory Egg Muffins

These egg muffins are portable, freeze well, and are protein-packed! They can be customized based on your personal preferences and are an easy and healthy meal for seniors and caregivers. Great alternative combos are bacon and gruyere or green chillies and ground beef!

    *Makes 12

    • 10 large eggs
    • 1 cup cottage cheese
    • 1/2 cup shredded cheese (swiss, cheddar, Monterey jack, etc. whatever you like!)
    • 1/4 cup spinach, chopped
    • 1/2 cup red or white onion, finely diced
    • 8-10 cherry tomatoes cut in half
    • A pinch of salt & pepper or to taste

    Steps

    1. Preheat oven to 350 degrees F. Spray a 12 cup muffin tin generously with oil, or use silicone muffin cups (no oil needed) - but don't use paper muffin cups.
    2. Combine the eggs and cottage cheese in a blender and blend until smooth. The texture will be fluffy.
    3. Stir in the cheese, spinach, salt & pepper.
    4. Pour mixture into muffin tin or liners until 1/2-3/4 full.
    5. Add the cherry tomatoes to each cup.
    6. Bake for 25-30 minutes, until eggs are cooked.
    7. Cool for a few minutes in the cups/muffin tin & then serve.
