Zucchini Fritters

It's a prime time for local produce in Ontario, with an abundance of zucchini. This fritter recipe is an excellent way to make use of zucchini, adding fiber to your meals. A bonus is that these fritters freeze well, which means you can enjoy a taste of summer later in the year.

  • 2-3 medium zucchini, grated
  • 2 eggs
  • 2 green onions, finely chopped
  • 2 tbls fresh dill, minced (optional, but worth it!)
  • 1.5 tsp salt
  • 1 tsp pepper
  • 1 garlic clove, minced (optional)
  • 1/4 cup all-purpose flour or cornstarch
  • 3/4 tsp baking powder
  • 3-4 tbls of avocado oil (or olive oil)

Steps

  1. Toss shredded zucchini with salt & let it sit for 10 mins.
  2. Transfer zucchini to a fine mesh strainer, a tea towel, or cheesecloth & press out excess moisture.
  3. In a large mixing bowl, beat the eggs, then add zucchini, green onions, dill, garlic, pepper, & mix well.
  4. Add the flour or cornstarch to the mixture & incorporate well.
  5. Heat oil in a large skillet over medium heat & drop golf ball-sized portions in the pan & press into 2-inch wide (approx) fritters.
  6. Pan-fry on each side until golden brown (3 mins) & transfer to paper-towel-lined plate.
  7. Serve with sour cream, tzatziki, or your favourite dip!
