Spinach and Mushroom Stuffed Chicken

This stuffed chicken recipe incorporates the health benefits of lean protein, mushrooms, and spinach to create a simple but tasty dinner option!

  • 2-4 boneless, skinless chicken breasts (depending on their size)
  • 1.5 cups baby spinach chopped
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • ¼ of a small onion, diced
  • 1.5 cups button mushrooms, diced
  • 1 tsp fresh rosemary, finely diced (or 1/2 tsp dried)
  • ¼ cup of cream cheese
  • ¼ cup mozzarella
  • Salt & pepper


  1. Preheat oven to 400 F.
  2. Using a skillet or mallet, pound chicken breasts to a quarter-inch thick.
  3. Season chicken breast on both sides.
  4. Heat butter in a pan over low-medium heat – when butter is melted, add mushrooms, onion, garlic and season with salt and pepper. Sauté for 5 minutes.
  5. Add mushroom mixture, spinach, cream cheese, mozzarella, rosemary, salt, and pepper to a bowl and mix to create the filling.
  6. Spoon filling onto the chicken, rolling shut, and securing with toothpicks.
  7. Bake 20 minutes – or until chicken reaches an internal temp of 165 F.
  8. Let rest for 5 minutes before serving.
