Honey Zucchini Muffins

This month’s test kitchen recipe is honey zucchini muffins - a sweet and tasty recipe perfect for breakfast or mid-day snack!

Total time



  • 3 cups of grated zucchini
  • 2 eggs
  • 2 teaspoons of vanilla
  • 1 cup of coconut oil
  • 2/3 of real maple syrup
  • 1/3 of honey
  • 1 1/2 cups of whole wheat flour
  • 1 1/2 cups of all-purpose flour
  • 2 teaspoons of baking soda and baking powder
  • 1/2 teaspoon of salt
  • 2 teaspoons of cinnamon


  1. Preheat the oven to 350 degrees.
  2. Combine the zucchini, eggs, vanilla, coconut oil, maple syrup, and honey in a large mixing bowl.
  3. In another mixing bowl combine the remaining dry ingredients.
  4. Pour the wet mixture into the dry mixture and stir just a few times until barely combined.
  5. Pour the batter into a muffin tin and bake for 20 minutes until golden brown.
