Springtime Crustless Quiche

This crustless quiche recipe is the perfect way to ease us into spring - great for a brunch or dinner and easy to freeze! It's healthier than a traditional quiche since there's no crust, so this recipe is perfect for those keeping an eye on their diet.

  • 1 tablespoon butter
  • 1 ½ cups chopped broccoli
  • ¼ cup diced onion (any type)
  • 4-6 slices bacon
  • 1 cup chopped spinach
  • 6 large eggs
  • 3 cups shredded Monterey Jack cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • 1 teaspoon kosher salt

Steps

  1. Cook, drain, crumble bacon & set aside.
  2. Preheat oven to 375 degrees F.
  3. Grease a 9 (or 10 inch) pie plate.
  4. In a large skillet, heat up butter & sauté onion, mushrooms, broccoli until tender.
  5. Add spinach & cook until excess moisture has evaporated.
  6. In a large bowl, whisk together the eggs, salt, pepper, garlic powder.
  7. Stir in the bacon, cheese, & broccoli, mushroom, onion, spinach mixture.
  8. Transfer mixture to pie plate and bake at 375F for 35-40 mins until center is just set.
  9. Slice and serve warm with your favourite hot sauce or herbs!
