1lb ish cooked beets (fresh frozen or canned work great)

1/4-1/3 cup apple cider vinegar

1/4-1/2 cup sweetener to taste (my fave is maple syrup!)

squirt of prepared mustard

nice generous pinch of salt


  1. Cook beets on your stove top until tender (approx 25-50 min depending on time)
  2. Peel beats and place in a blender
  3. add all ingredients
  4. blend on medium until beets have a smooth texture
