Autumn Apple Muffins

This recipe is a great way to use up all those fall apples! Perfect with a cup of tea or a swipe of peanut butter, these healthy muffins are perfect on a cool fall day.

  • 2 cups diced apple
  • 2 cups whole wheat flour
  • 1 1/2 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp allspice
  • 1/4 tsp nutmeg
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup melted coconut oil
  • 1/2 cup maple syrup
  • 2 eggs
  • 1/2 cup Greek yogurt
  • 1 tsp vanilla extract


  1. Preheat oven to 370 degrees F. Grease your muffin tin if needed (or use liners).
  2. In a large bowl, combine the flour, baking powder, cinnamon, allspice, nutmeg, baking soda, and salt. Mix well.
  3. Add chopped apple and stir.
  4. In a separate medium/large mixing bowl, whisk together the coconut oil and maple syrup. Then whisk in the eggs, vanilla extract, and Greek yogurt.
  5. Combine the wet ingredients with the dry and mix until just combined with a spoon or spatula.
  6. Divide the batter evenly between 12 muffin cups.
  7. Bake for 17-21 minutes, or until a toothpick comes out clean.
